Thought I'd completely fucked up a batch of kimchi, but it's been a while since I made it and I'd just foolishly tried splitting it between two jars instead of the cram it into a larger single jar and squish it down method. The day has been saved and it's now submerged in its own stinky delicious liquid and should start fizzing away in a week or so.
I bloody love kimchi!

I pretty much wing it off the top of my head in fairness. I should probably write it down for each batch and compare notes. You'll see so much variety in recipes online, some say 2 tsp fish sauce, some say 1/4 cup.
5-6 tbsp salt for the Chinese leaf brine seems to work OK with the standard size you get in most supermarkets. Leave that in the fridge for 6+ hours.
For the paste, 5 cloves of garlic minced, 3 tbsp fish sauce, a decent chunk of ginger (an inch square maybe), 1tsp sugar, 5 tbsp gochugaru (I did 6 this time for the lols as it's not very strong)
4-5 spring onions, a large carrot, raddish (I can never find daikon) and an apple (optional but I like it)
It's probably not at all authentic, but tastes good to me!
I don't bother with saving two leaves for the top of it like most recipes suggest. Just push it all down into the jar and use a glass weight on top.

Cool. I think I just looked at a bunch of recipes to begin with and just cherry picked from them. It worked well first time so I've just been doing roughly the same every since. I might try adding some cayenne pepper next time, as like I said there's really not much of a spicy kick to it.
I sterilise jars for pickles, but not for kimchi. Any recipe I've seen just said wash well with warm soapy water. I've been leafing through the art of fermentation and he seems to be on the same page.

Well, I'm late to the party, but I finally got a 4k tv today, 50 inch Samsung Q80A. Unfortunately no 120hz mode at 4k on it, but the picture quality is great. Been saving Horizon Forbidden West for this and it looks lush. I also managed, while putting it together to drop the stand on my foot, which is hefty, made from 3mm steel and it didn't break my foot! Bloody hurt though (maybe should be in the brave little soldier thread).
