I could totally get on board with all this. I have a set of shit knives that are blunt as fuck now. Enjoying cooking more, mostly as it enables me to be a lush locked away in the kitchen with music playing. I will peruse this thread with interest. Welcome, we're all here just trying to live our best knives. Must be something about gamers that we need something else to focus on and obsess over.

Only had non-stick frying pans until I got a nice stainless steel one last christmas, and it is by far my favourite pan to cook with. When the big non-stick pan needs replacing, I'll be adding a carbon steel pan to my arsenal. Hope to eliminate all of them eventually, although I might keep one for frying up some eggs.

Sabatier 3 piece knife set - got one of these from my folks when I moved out some time last century. Still going strong, and they get used every day. I took my dear old sainted mother's favourite cast iron frying pan when I moved out too- it's starting to show its age, but it's outlived countless non-stick aluminium pretenders. I picked up a half-price Le Crueset casserole dish (which pretty much gets used as a saucepan, wok and steamer) about 10 years ago. The rest of our kitchen stuff is bog standard bought from a supermarket, but those bits are going to be buried with me.

I'm a sucker for Le Creuset, we've got quite a few bits and bobs. I have one of the massive cast iron casseroles which gets used weekly, it's great. I guess you could get something similar for half the price but I like the middle class status symbol

Letβs talk about appropriate chopping blocks next Good idea. I hate boards with grooves. Makes it harder to get food off of it, and when would so much liquid even accumulate that it would reach the edges? Are people cutting or crushing their food?

Thereβs specific food grade oils and conditioners you use. Keeps it sanitary, stops it getting grooves and stops food from staining it.

So... A plastic coming board from IKEA will work for most people.
Mine is not that. But not everyone can partially debark a freestanding pine tree and let it develop natural moist resistance for two years before feeling it, and then let it sit for two more before sending it to the mill.
Then have it split and use 3 centimeter staves (all heartwood match) for a checkerboard all natural glue job.
The glue was made using tendons from a moose that fed in the same forest that the pine grew.
Again
A plastic cutting board will be sufficient for most people.

How have I just found this thread?! Iβve only got two βniceβ knives - a Global somethingorother and a Kai Shun Premier Santoku. I just use regular whetstones for both (or a Mino Sharpener for the Global). Love them bothβ¦ but the Kai Shun is mega.
