Also this thread needs to be renamed the Knife Wankers Thread. It's way more wanky than the coffee wankers thread. Would this be a bad time to talk about camping knives, then? I think it would be a perfect time. We're all some sort of wanker or other.

You came to the right thread for pedantic nitpicking I can probably out-pedant anyone on this forum when it comes to knives and steels and sharpening, seeing as thatβs a daily part of my job. Iβve even dabbled in bladesmithingΒ Talk to me about o1 vs a2 whilst I rummage in my pocket.

Seriously, a cheap quick sharpener from IKEA is good enough for any knife and any home chef.
The important bit it's that you use it.
I have a Japanese vegetable knife I've been using for 26 years and it's sharper than any knife I've seen at any of my friends places.
Magnet rail to store the knives, quick sharpener for everyday use. Then get a what stone of your a slightly overweight knife nerd who like to show off on the internet.
You'll probably use it once every three years.

I'm not advocating this for all your posh knives, but a handy life hack I learnt a while ago - you can sharpen knives on the bottom of a ceramic mug, or on a ceramic hob. It works. It really works.

We just got our Global set sharpened by the local bladesmith, Doug would be using it will keeeellll of him borrowed them.
I've bought a whetstone to keep up maintenance at home. Any tips on how to use it and is it easy enough?

I find it pretty straightforward, just keep it wet and pressure consistent. Nothing wrong with using an angle guide until you get used to it either.

I have some metal ones, usually for harder / bony stuff, like carving a roast, including a lovely Argentinian "Plata" gaucho knife (my in-laws are actual gauchos), that I use for occasions/BBQs and can wear on my hip/belt.
But most of the time I use ceramic - they stay sharp for years and are very light. Just don't drop 'em!

Well worth stropping on leather after sharpening imo.

I could totally get on board with all this. I have a set of shit knives that are blunt as fuck now. Enjoying cooking more, mostly as it enables me to be a lush locked away in the kitchen with music playing. I will peruse this thread with interest.

I was joking earlier, but in fairness one of those did the job for me perfectly well before I started spending money on a set of decent knives. Probably best to give it a run on a steel before you put it through that, as you'll just be shaving off kinked bits of the blade unnecessarily.
Definitely better than just making do with blunt knives.

I've got a water sharpener for my Global knives. I should really do them more often. I've got a whetstone thing I got on Amazon sales one year I've never used. Also got one of those "Sharpen Everything" things....used it once and it stripped chunks out of the knife!

I like fancy products in general but my kitchen knife is spectacularly low quality, however I love it and it's great. It's a Kitchen Devils chefs knife, I snapped about 1.5cm off the end of it stabbing it into a chopping board so now it has a kind of tanto shape. I also use a very low quality knife sharpener which doesn't so much create a sharp edge as much as it strips off bits of metal making it kinda micro-serrated (which is super effective at slicing)
