I used to smother a slice of processed cheese in peanut butter, roll it up and Bobs your uncle. Cram it in the gob. Lovely. Not had it for years though. I do prefer thin slice of a medium white cheddar in a burger, nothing too strong and nothing blue or it makes me sick. This morning I ate a bowl of cereal in about 30 seconds as I was running late and hours later I'm still burping it up. I'll never learn. Have you seen a professional about your peanut butter perversion?

That’s not to say it doesn’t depend on the meat type though. A big gamey meat goes well with some blue cheese. More subtle meats can have subtler cheeses. Swiss is a no brainer with things like pastrami. But processed cheese on a big old flame grilled burger works so well. It melts with consistency and acts as a flavor sponge, taking the fat from the meat and whatever else is on top of it and making some umami goodness out of what by all rights is garbage on its own. Proper cheddar slices should rarely be used to melt on something, better to melt in something. The fat separation of proper cheddar when melted hot and fast is problematic and is tends to stick out as a flavor rather than complementing the rest of the setup. You can work around the melting issue by either grating rather than slicing, or putting the slice on after the burger has rested and cooled a bit, but both are problematic in their own ways. Cheddar goes best when you have a neutral lean meat like turkey where you intentionally want that cheddar flavor to add something that isn’t inherently there, and the younger usually the better. But likewise if you’re sticking processed cheese on something neutral that’s rested, you’ll have a bad time. It’s all about knowing what works where and when.

You're right though, processed cheese on a barbequed burger is where it's at. I can enjoy proper cheese on a burger, but it can easily overpower it and become claggy and astringent.

Also, over here you can buy sausages with processed cheese in them. It's the standard breakfast sausage at most cafes, unfortunately.
