Had the best chicken burger from some hole in the wall place, doesn’t look like much but if was sublime. if you’re ever in SF check out Hot Sauce & Panko on your way to Lombard Street I had fried chicken from there and it was spectacular so I believe you.

I'm in this place in the center of Bristol called Honest Burger, and not only is the burger stunning, but the rosemary chips are fantastic. It's like those rosemary and thyme sensations crisps in burger and chip form.

So whenever I cook onions they always seem to take an age (like half an hour), I find butter is by far better than anything else but they just seem to take so long, I see these YouTube or whatever videos from around the globe and the onions seem to take no time, any tips? Sometimes they're just shredded and plonked on top of the pattie, perhaps I'm cutting them too thick? I've thought about giving them a blast in the microwave before I take them to the pan.
Or maybe I just need to stand next to the stove and constantly turn them etc? I can't really pay them 100% attention cos you know life and kids and booze gets in the way.

Do a half dice on your onions. Cut towards the root about 1/4 cm all the way across, then slice perpendicular to that. Should have quarter moons. Pop them in the pan with oil, butter, whatever you like just med heat for 20 mins minimum until they caramelise. And never under onion, you always want more. Sort your burgers in another pan/grill/BBQ
There's a million YT vids on cutting onions for burgers and its still subjective

People with London experience:
If someone was going to be staying in the South Kensington area for a few days, where would they recommend for a decent burger? Google maps shows an Honest Burger, a Gourmet Burger Kitchen, a place called Byron, and another place called Big Fernand that seems to be of French origin.
Don't really fancy a Five Guys unless all other options are closed.
EDIT: Or alternatively, somewhere in the vicinity of Victoria, since I'm sure after spending four and a half hours on a coach I'll be immediately ready for something.

I see there is flat iron in kensington area, flatironsteak.co.uk/locations/ been to the one near me and their bearnise burger is so good (also they do free beef dripping pop corn while you want)

About onions in burgers. I use either finely chopped shallots, no cooking. Or fair ground onions - roughly chopped high heat in olive oil for about 5 minutes, pinch of sugar. If some of the bits get a little charred, so much the better. Quick, easy, tasty. ✌️

I'd second Patty and Bun or a jaunt or a jaunt south of the river to Battersea for Bleeker.
Honest can be great but I've also had mixed experiences.
I'd avoid GBK, despite being one of the oldest they are probably the worst of the bunch.
As for Byron I thought they had gone bust. Been a while nut from memory they're OK.
Never tried Big Ferdinand.

Ooh, I had forgotten about bleeker. Need to remember that for the next time we're down visiting. A rake round the revamped power station and for those of us who have no fear of heights (unlike me) can go up the chimney lift mighthelp sell it those who are not so keen on burgers.

Out of that lot I've only been to a Byron and a Five Guys, being in the SW there's not a massive choice, Five guys isn't really a sit down relaxing meal place and burgers are merely OK, Byron were a bit hit and miss but I did like their restaurant and service which counts for me. Shut down now anyway.
