I've tried the Ramsey place a couple times, don't rate it at all. Personal preference thing, I used to like burgers with interesting flavours and fillings but nowadays it's all about the quality of the meat, strong meaty flavours. Bleeker St burger is scratching that particular itch currently, quality patty, cheese, onion, lettuce, tomaro, bun and done.

The question is, will Wendy's returning to the UK see the usual decline in quality? Like Papa Johns and Five Guys. I mean, I'd say it was 90% likely, sadly. Papa Johns when it first got to the UK was like 85%+ of the quality of the US version (which I sampled a fair bit in the US - it's not as good as a lot of local one-off pizza places but it's decent), but then it decline to be drastically worse. I never had Five Guys in the US, but the UK version has clearly not maintained quality control across all its restaurants. The one in Wood Green went steeply downhill, whereas a couple of the central London ones have maintained quality (though the prices are kind of demented). And Taco Bell here is absolutely vile. Horrific. It's kinda-ok in the US, like I guess, for the price. But here it's like "run a mile". Honestly UK BK isn't that much worse than US BK (it's one of the closer ones), so if Wendy's retained quality to that degree I'd actually be okay with it. Also hopefully they can pretend the weird family-restaurant thing Wendy's had become before it left the UK just never happened.

Like you say, no frills, just a burger done right I tried the Bleeker near me via Deliveroo and received a rubbery burger in a sea of liquid cheese (?!?). The flavour was good but the texture really was not. I decided not to hold it against them and just to never order from them on Deliveroo, just go in and try them sometime.

This was my experience too. Had it delivered in the past and didn't like it at all so I never bothered to try them again. That is until recently whilst we were out, it was a very welcome surprise. The meat flavor reminds me of when MeatLiquor was in their prime.
The king of meat flavor nowadays is almost certainly Burger and Beyond though.

Not been to a burger place in a couple of years, we did finally get BK a couple of weeks ago, yeah it's BK but first fast food in ages was pretty darn good.
Decided to never buy patties from a shop again, even the expensive ones seem rubbery but after making them at home we'll never go back. Just mince and whatever spices, salt, pepper and cook over hot coals and it's a nice soft burger. Some nice home made maple bacon, a slice of brie slightly melted and an egg and you got yourself a winner.
One thing I would like to try is a new sauce, ketchup is my go and most bbq sauce derivatives are too sweet.

Mix ketchup, mayo and a few random bits like a splash of worcestershire. M&S do a nice bottle of premade stuff, but guess that's not going to help you... Obviously helps if you have mayo that doesn't taste like it's got half a bag of sugar added.

Equal parts ketchup, mayo, American mustard; diced gherkin (and a splash of the juice); and a dash of hot sauce of your choosing (I like Frank's Xxxtra Hot). Works 80% of the time, every time.

If you don't grill the patties immediately after forming them, leave out the salt and salt them directly on the grill. Also, knead them as little as possible. It's relatively cheap, readily available and fills a hole. It's like Greggs really innit.

Like, Papa John's isn't "good" in the US or UK, but in the US it's wildly better than the UK version, and the UK version started out a lot closer to the US version and declined. Like if the US one is a US 6/10, it'd be a UK 9/10, and the UK version started as a UK 8/10, and declined to a UK 6/10 (so like a US 3/10). The saddest damn thing is if you just teleported the cheap local pizza place from the part of Indiana where I used to live to the UK, and somehow got it decent ingredients, it would be heralded as some sort of amazing restaurant with stunning pizza, and it was just like, normal there (well a little above average, maybe 7/10). Sadly I see this decline a lot with new restaurants, whether they're chain or local one-offs - they start out with decent or even good ingredients and hard work, get a following, and usually they last at least six months being pretty cool, and then they decline, either slowly or suddenly, to a more "average" or "bleh" standard. Ones which are consistent are rare and special tbh. The only burger restaurant in delivery range of me which hasn't befallen this decline-fate is Dip n' Flip (I mean I guess Bleeker and maybe some other Brixton stuff too but they're so far it's not worth it).

So question to any Brits re: making burgers - where do you get your mince, and how do you get high-fat mince that's not just horribly cheap and nasty?
Really for a burger, you want like 20% fat mince (more is fine, because it cooks out, for the most part), but I've found that pretty hard to source - it's extremely easy to get 12%, but that's not fatty enough in my experience.

Wait can anyone join Costco now? Last I checked, which was admittedly probably over a decade ago, it was a pretty limited list of professions (i.e. actual "professions" - people who swore an oath like doctors and lawyers, firemen/cops because they're helping society, and shopkeepers). Looking at their website I see no obvious mention of that restriction now.
EDIT - Aha I see you can shop them online without that!
Last butcher I talked to about it was like "Yeah we don't do that", but he was an odd chap so maybe I will try someone else.
