Here's a few:
Time limits - I like to be meticulous and take my time, whenever a game forces a time limit on me it just stresses me out and makes me feel like I can't enjoy the game properly
Endlessly respawning enemies
NPCs you have to protect - thinking mainly of TRPGs like Fire Emblem and Tactics Ogre here. In either case, said NPCs will invariably march headlong into battle and get themselves killed as quickly as possible turning the mission into a massive pain the arse that wouldn't be the case if they just did the sensible thing and let you either control them or have the AI move them to the back of your group where they're safe
Dark Souls mechanics in anything that's not Dark Souls - stamina bars, overly punitive deaths, etc
Roguelikes
Stat tracking in single player games - I don't need a record of how many times I've died/how shit I am
Unskippable start up splash screens - I've been playing games for decades and I still don't know what Criware is, nor do I give a shit
Vignetting at low health - putting shit all over the screen when I'm nearly dead doesn't help me stay alive, it means I'm more likely to die because I can't see what I'm doing
Crafting - why have just one item when you can have 5 items to make the one item
Video games are shit aren't they

Stalking missions, where you have to follow someone through a street or map without being detected. You're not allowed to be too close nor too far away. Sometimes the NPC will stop to turn around and look, sometimes they will accelerate away to keep you on your toes.
Utterly dull and frustrating gameplay. Assassin's Creed titles were the worst at it for me because I expected better from that series. I'm afraid to say that I chucked Black Flag after one stalking mission too many, barely sampling the excellent sailing gameplay. I've never played an AC title since and will rage quit any other game with the same mechanic.

More generally
- Unskippable tutorials for more or less standard controls (A to jump? You don't say?)
- Shuffled controls for no adequate reason (Up to jump and A to activate a cursor?)
- No invert Y option (thankfully few left)
- Auto snapping the camera back to the default position (why let me change the height in the first place?)
- Sort of an offshoot of unskippable cutscenes, but unpausable cutscenes as well.
- Single channel volume setting instead of Dialogue/SFX/Music/Master and similar
- Holding down buttons to skip/close menus instead of just pressing the button.
- And a very specific one, "Map updated" with no visual hint as to what has changed. I get the message several times on Mass Effect 3 to start a "hunt the terminal" thing on the Citadel but the map is exactly the same as before, split into 6 sections...

Checkpoint -> unskippable cutscene -> difficult boss. Why do so many games have it in that specific order?
Also, anything with the D&D ruleset. I enjoy oh so very much swinging my sword and hitting thin air several times in a row.

Idiotic AI in games built for Co-Op
Military shooters that have like 16 different SMGs to collect but they all feel exactly the same to shoot

Guild Wars 2 - Jumping puzzles where the in game camera moves so close that you can't see where you're going.
Off topic, but motion blur and head bob as default settings...grrr!

When there's no jump button in games. Like Sniper Elite 5, where you can only jump over obstacles when they want you to.
Especially annoying when there is a jump button but can't jump over something the size of a coke can.

Multiple paths but then blocking backtracking Reminds me of Doom 2016 having loads of secrets but not allowing you to backtrack so you have to stop and look as you go along, which kind of messes with the pacing a bit. Glad they addressed it in Eternal by unlocking fast travel at the end

Nowadays, any mechanic that pads out a single player portion of a story based game for longer than about 20 hours. I'm just not gonna finish it.
The same with From games. Yet again, shovel money at whatever that new Souls game was (it wasn't actually souls was it it was Rings) and...nope.
Don't have time to die 50 times at one spot thanks.

Boss fights when you hit the enemy and realise it's going to take about 20 minutes to kill it. The fight isnt hard or challenging just a massive tedious slog of plinking away.
