So for me…
King of the Hill
It would be stupid to pick it up where it left off so it would have to be present day. Everyone is still in Arlen because obviously they are.
Hank - now manager of Strickland Propane after Strickland dies in a strip club. Still a staunch conservative but just can’t get on board with the “asinine” Trump brigade. Won’t admit it but misses Obama.
Peggy - has bought in to the MAGA ideal but only because she loves the slogan. Volunteers at immigration as an interpreter.
Bobby - works as a butcher. Liberal and struggles with his parents view of the world. Married with chubby kids - loves dad jokes.
Luanne and Lucky - tragically died when a tornado hit their trailer park.
Dale - now subscribes to Qanon and may even have started the whole thing. Rarely gets invited to drink in the alley anymore. Nancy moved out a long time ago and now runs in office. Joseph runs a bar.
Bill - in a change of fortunes, Bill met someone on a dating app and has remarried. Now runs a local barbers which acts as the local community hub. Happy, but terrified of ever being left again.
Boomhauer - Retired from being a Texas Ranger. Still single. Still incomprehensible. Got Bill into online dating but can’t understand why he’s now out of it.

Firefly and Deadwood are the most obvious ones to me. Carnivale was another that was canned too soon.
Netflix thinks nothing of canning shows that don't meet some stupid first season rating within the first month and leaves them hanging.

Jason Lee really walked off into the sunset like David Banner at the end of every episode of Incredible Hulk. He went from starring in every Kevin Smith show, to having an incredible hit TV show, to disappearing into total obscurity. I miss that guy.

I think Farscape had a decent run, the 200th episode of Stargate SG1 did make me quite nostalgic for it though. Speaking of Stargate, Universe should have had a better run than it did. They did sort of do it to themselves by spending more time on Earth than the ship, but it had a lot of potential.

Whatever happened to that? It started just before I left and it seemed really big.. and then it just seemed to disappear. ---- Firefly would be the obvious one, but I think Serenity did a pretty good job finishing that off. Terminator: Sarah Connor Chronicles - this was just starting to get really good, and the setup with the rogue machines faction was just getting intriguing. I went into T4 hoping they'd tie into that, but they didn't. Everything Sucks (Netflix) - This wasn't particularly great or original in season 1, but I'd have liked to see where it went in season 2. Teenage Bounty Hunters (Netflix) - This was particularly great in season 1 but no-one else watched it so I never got to see where it went in season 2. Probably sense8 as well, but I've been putting off watching the last season because I don't want it to end.. so I wouldn't actually know how well it wrapped things up. I think it's a good thing that Angel didn't try and air its 6th season at the time, because they'd never have pulled off the sfx satisfactorily. But I'd love to see them do it now with modern special effects. Then do another season that merges Buffy and Angel back together. Jessica Jones - Bring Luke Cage back in as a love interest. Maybe bring in a few of the good characters from Iron Fist like Coleen and Misty. Have Tom Hiddleston as a bad guy. Friends: Apocalypse - Post apocalyptic zombie series starring Ross, Rachel, Phoebe, Chandler and Joey.

It finished in such a horrible way that it deserves a third season just to give it a nicer ending. That and I really liked it.

Yeah, Firefly could have really done with at least one more season. Or even just a full seaon for that matter.
Dark Angel apparently only had the third season left to finish it, but it wasn't to be. There are two thin books based on how season 3 was to play out, but it's not exactly the same thing.
Space: Above and Beyond also ended too early. I mean, it was a pretty depressing series, but still. Nothing that has come out since is really all that comparable.
Kindred: The Embraced wasn't perfect, but it definitely had its moments and some cool characters and there aren't exactly a lot of shows set in the "Vampire - The Masquerade"-setting. Unfortunately the lead had a motorcycle accident.

I wouldn't want it to continue now, but I wish Deadwood had played out properly.
Definitely would love to have seen another season of The Dark Crystal. I *really* enjoyed that.
Firefly (though admittedly I'd have less interest in that after realising how skeezy Whedon is).
On a similar note, I'd have been interested to see where the live action Cowboy Bebop went. I thought it was decent and had potential.
On the other hand, I wish 24 had ended after season 5, and Stargate SG1 (which is one of my favourite shows) would have been better if they'd packed it in when Jack left the main cast. Oh, and The Simpsons, of course.

I watched it last autumn and it still holds up as quite a modern show compared to its peers. Ending on a bleak cliffhanger worked better than I remembered but some closure would be nice.

That got six seasons and went on so long the lead actor quit! EDIT: Since im nitpicking Firefly: Everyone in the cast is now ancient and Joss Whedon has been cancelled. Also: Not that amazing Space: Above and Beyond: Nobody cared the first time because it was bang average Farscape: They gave it a couple of TV movies to finish the plot. Muppets in space is done
