In fairness I did my usual thing of vaguely following a recipe the first time and then just winging it. The below is pretty close to what I did, just without the prawns. www.simplyrecipes.com/recipes/slow_cooker_jambalaya/4 celery sticks, a large red pepper, medium onion all cut pretty chunky. Diced chorizo, chunks of chicken thigh (4), minced garlic, a decent squeeze of tomato puree. A tin of plum tomatoes all squished up. About a pint of chicken stock (500ml but I also rinsed the tinned toms out with a bit of water) Oh, and some bay leaves. My spice mix probably wasn't at all authentic and had a heavier focus on smoked paprika (love it!) with a bit of cayenne for spice and some fennel seeds for good measure (whacked it in the coffee grinder to break those up a bit) I didn't pre-cook any of it, just bung it all in the crock pot, give it a good stir and then leave it on low for 7-8 hours. Stuck a mugfull (about 330ml I think) of long grain rice in and gave it a good stir and turned up to high for about 40 mins (stirring a couple of times) It's only eaten by me btw, so not a huge amount for a family but probably 3-4 decent sized helpings for me.

I just love the convenience of roughly chopping stuff and chucking everybody in the pool at midday and coming back 7-8 hours later to bung some rice in. The smell later in the afternoon is something else! User Dfunked a cannibal confirmed!

Ha, well Mrs Fox is French and after 10 years of looking we finally found a shop in Spain that has the saucisse which is a family favourite. So we ordered a little care package with wine, ravioles, decent cordial and stuff. Will order again soon.

Moving the eggs around until it's nearly set is a game changer for omelettes btw. I'm a fairly recent convert as I used to do it 1980s style like the above too.
It's so satisfying turning out a perfectly cooked one without a hint of browning.
