I made a Thai Green Curry with Chicken Thighs, Thai corn and beans. Did it in the slow cooker, not worth it with chicken really.

Why'd you slow cook it man? The idea of a Thai green is that you cook the protein quickly in the sauce...

To defend ecosse you can absolutely slow cook a Thai curry, as long as you don’t overcook it, the speed and method don’t really matter. You can just chuck it all in and get something decent, or if you want to be more fancy you can flash fry the paste to bloom it, then slow cook it with everything else to better meld the flavors, but you can get something perfectly tasty with a slow cook regardless.

I did overcook the chicken , ended up “pulled” but not the veg as they went in much later. I did first fry the paste in oil, then added fish sauce, palm sugar and a little stock with the chicken to slow cook. Later on the veg, chillies and coconut milk and Thai basil at the very end. Would work better for a beef curry I think. There seem to be lots of recipes around where they mix the coconut milk in at the beginning but I was unsure if it would split after so long…
