I'll issue a partial retraction on Camembert.
Turns out I needed to do a bit more work than just throwing it into a sandwich, it was the only cheese in the house and I was trying to use it as a general purpose ingredient.
Yesterday evening I cooked up veggie burgers and mushrooms and at the very end of the process Camembert on top to prevent it from melting too much, it has an unpleasant gluey quality if it gets too much heat. It turned out rather nice.

My lactose intolerance just triggered looking at that. My love of cheese always outweighs my lactose intolerance*. Not going to lie, I would try that. *Many cheeses are actually pretty low in lactose, particular hard and aged cheeses. This may or may not be true of these slices, which can barely be considered cheese.
