FFS... Now I want some nice cheese. Screw you guys! Might have to finally order some black bomber from Amazon, as I've given up ever seeing it in a shop.
Got our local farmers market this weekend and there's a nice local-ish cheesemaker who do black bomber style wax wrapped cheddars. Had a lovely spicy one and a charcoal one from them last time, so will probably stock up again this time.

We went to a place called Wensleydale Creamery Visitor Centre in Hawes. It's in Yorkshire though so might be a bit of a trip! You can try many different cheeses at this place including black bomber. Its also sold at a farm shop I like just outside Manchester called Albion Farm Shop & Cafe. Wensleydale and cranberry or with apricot is another favourite but for work or general cooking we get the the basic cheddar cheese at Costco. Catering pack size so its cut, wrapped in foil and some of it frozen. Yes its me frozen cheese guy, feck off! Its odd but it works

I was once bought a cheese board/platter as a Secret Santa gift at work, I liked how it was presumably stored at room temperature in the big box of gifts for a couple of days prior to the handing over awkwardness, it was the last Secret Santa I did.

Don't bring that frozen cheese talk over to this forum you degenerate. Cheese should never last long enough for you to have to freeze it, you should be in a cheese coma. Even the torso sized blocks from Costco.

Frozen cheese is possible in certain situations - we freeze blocks of raclette so it's available when we fancy that for dinner.

This also might belong in the unpopular opinions thread, but American Cheese is the best burger cheese. It melts without separating (especially if you steam it briefly directly on the burger), holds a good texture, absorbs the flavour of the meat well, and doesn’t overwhelm the palate.

Yeah, it’s shit absolutely everywhere else (except maaaaaybe a cheese toastie at particular times), but works amazing for the classic beef burger.
That said, different meats mix it up. A gamey meat burger is crying out for a bit of blue cheese.

I'd never buy or eat it in other circumstances but processed cheese slices are the best cheese to use in burgers. Provolone is good for this too. And I love blue cheeses as much as anybody can but as burger or steak topping...nope doesn't work imo Back on general cheese stuff, recent revelation is that a mature Lancashire (Sainsbury's do a good one) is one I should buy more often. Amazing on a Hovis digestive biscuit. Or ten.

I'm generally pretty forgiving when it comes to cheese but the the sulphurous stench every time I open the fridge door to get some milk is my limit. Perhaps I can construct a giant mouse trap and use it as bait to eliminate French people.

You know what I've got a newfound love for? Red Leicester. Couldn't fucking stand it when I was wee and now all I want is it's nutty goodness inside me. That's not what you've asked for, but it's what I've given you. Red Leicester. Is it cheddar though? No. It's Red Leicester. It's like the thinking man's cheddar. I find this is very hit and miss - we got some for free with a purchase of black bomber direct from the Snowdonia company last year, as it was lovely, as you describe. Bought some of the same brand from Waitrose this year and it tasted of onions.

Generally we have it with potato's and an assortment of hams and other small goods but realistically you could have anything that goes well with cheese. Also get some reblochon it makes fantastic cheesy potato's and can be melted down with white wine to make a great cheese sauce/dip.
