There are rather a lot of games getting recycled these days. But still not quite enough...
Fahrenheit/Indigo Prophesy The circumstances of this remake are specific, David Cage drugged, kidnapped and confined to a desert island for the duration of development. The game will have the same starting point but skip the Simon Says and the David Cageism diverging completely in key areas, excising things like the ancient aliens component entirely.
Why bother? It's an interesting premise that couldn't really work in any other medium. Inexplicably you brutally murder a stranger in a diner bathroom in a ritualistic manner. There is a window for you to complete various actions that lead the player towards certain outcomes. The shocked killer can flee the scene but various things you do or don't do can lead investigators right to you. You can use your time to carefully hide evidence and leave without seeming suspicious. You've committed a murder though, you have no idea why and your problems are just beginning, maybe you feel you deserve to be caught. That's another pathway.
This could just as well be a thread about games that went South really fast, Fahrenheit did, but the initial premise deserves another chance as a remake of some sort.

I have fond memories of Carrier Command for Atari ST, I could go for a reboot of that which keeps the slow, tactical island-grabbing gameplay.
(I never played Carrier Command: Gaea Mission on x360 but it wasn't very well received...)

Omikron: Nomad Soul It was ahead of it's time and with today's tech they could make something truly special. Plus it has Bowie.
Freedom Fighters Have fond memories of this and enjoying the story. The combat was pretty good and controlling squad members added something.
Hidden & Dangerous It was bastard hard and I liked the Cannon Fodder style of squad members having names/personalities so you would be gutted when they died.

Top of my list are KOTOR and KOTOR II.
So very happy with the announcement last month that it's happening, the first one at least. And they can't just do the first one without Sith Lords as well, surely.

Proper remake of Saints Row 2 optimized for PC and I'm happy. There were rumours of a fan project, but sadly it seems the main person responsible has passed away. :-(

Fairly well liked from what I've read too

Dammit, that does look exactly like what I asked for... now I just need a PC to play it on.

If they did the Resident Evil HD style remake for Silent Hill 2, that would be quite something.

I really want all the old Persona games on Switch, especially the PSP version of Persona 2: Eternal Punishment as that has never officially been released in English
Persona 1 is pretty janky by modern standards though, so a remake rather then a remaster would be good

Metal Gear Solid Burnout 3 Max Payne 1/2 Unreal Tournament No One Lives Forever Kingpin (I know there was a remaster of sorts but I want a proper remake) Unreal Tournament is a funny one (assuming you mean the original) because the sequels are essentially the same game updated. I suppose a remake for that would be keeping everything about it the same except visuals and audio, which I think is what most people think of when they think of these kind of things but that's never how it turns out
I was going to say Deus Ex but I know if they remade it now, it just wouldn't be the same game. It'd be 'updated for modern audiences' and be a different game to the one I like. A lot of my favourite games are products of their time so I can't think of anything I'd genuinely want to see remade

Concerning UT I want the game that Epic were meant to release when they made it a community driven project and then abandoned it as soon as Fortnite kicked off. I just want to Flechette Cannon some fool in the face in shiny 4k. Is that too much to ask?!

It's such a shame arena shooters died out. It's one of those eras that really gets me in the feels - just a different time in gaming. It's so strange that an entire genre can just become unfashionable. There's nothing inherently wrong or problematic with it, it just got replaced by online military shooters I guess and now battle royale

I can't think of any game I would want remade but I am a sucker for re-releases of retro games on modern consoles. I merrily spend good money on well ported shmups from the late 80s onwards as they have that easy to pick up and play appeal. If they are ad-riddled (on android) or terribly emulated and bare-bones then I'll think twice, but a proper decent low lag port with save states, online leaderboards and other modern day additions is easy money from me. E.g. I'll spend £50+ on a collection of old Darius games or a port of Ketsui, but won't buy the likes of Assassin's Creed until they hit below a tenner for the GOTY/Gold edition.

Nothing about attachments or perks. Well that and bunny hopping and ridiculous announcer voices.

Persona 1/2IS/2EP pack for Switch/PS4/5 with all of the PSP enhancements and the original OST back as an option in P1. Uncensoring the silly stuff in IS would be a bonus too. And then we need SMT1/2/If pack for the same consoles, ideally with the most content complete versions mixed with the best graphical and musical versions. Or remake them in the Strange Journey/Etrian engine.

Its like the survival horror genre, the only difference there is tiny amount of games get made for the genre (the ones that do tend to be cheap and shit like there is one company that shits out Outbreak or something

Nah, that sneaking in the shadows snuffing out torches. Dishonored wish it had that. I do love Dishonored though.
