Think I need to look into a meater or something similar. Just did a steak on the grill and could've done a much better job. Ambient temp was clearly a lot hotter than the external thermometer shows as it was well over my intended internal temp after just 20 mins. Plus the grill is 30m from the house so not exactly convenient to go out and check on it... Some of the negative reviews of the meater are putting me off it though. Mrs Toast is trying to find something for my birthday, and I was going to ask for a Meater+ until I saw some of the reviews on Amazon. Having a bit of a wobble now in case it's pants. I've got a ThermoPro TP08 already, so don't really know if there's enough potential advantage in the Meater to take the risk?

I think they do some 100 day money back thing if you aren't happy. I honestly can't sing it's praises enough for how well it works. @alpha That hunk of meat looks good, what's the price for something like that over there? About 23-26 euro a kg and the steak is a 1 kg or thereabouts cut. Also feeds two for two days. Seasoning I normally use is salt and pepper and if I feel fancy some garlic powder. You're looking at 3-4 times that here

I’m pretty lucky in that I can get some of the best quality meat in the world at super low rates. Advantage of living in an agri state, I guess.

UK based people, where do you get your charcoal from if you buy in bulk?
Used to get it really cheap from a local guy I know. But the selfish bastard is retiring and moving abroad

UK based people, where do you get your charcoal from if you buy in bulk? I bought 6x 8kg bags of Weber briquettes from here a while ago for £9.99 each, but that was during a sale... I'm having a BBQ this weekend with a few friends (because we're all proud & loyal subjects) and have just received this: I'm quite nervous about cooking it, really don't want to frig it up so if you have any suggestions I'm all ears!

Thoroughly ruined some pork ribs the other day. Not for the first time, I overdid the smoke and tainted it.
I'm going to go with assumption that a wood top up half way is only a good idea for a really long cook, such as a brisket or something?

I got some chicken breasts out of the freezer last night with the intention of making quesadillas, but not it feels wrong to not get outside and BBQ. I don't think I've ever done chicken breasts on the grill (only ever do thighs) I assume direct heat for about 10-12 mins would be the way to go here?

Add in a powerful wok burner if that's not too much to ask... I've seen ones with a side burner but guessing they aren't that powerful. Then there's the weber ones with the round grill bit in the middle you can remove.
Can't really tell what's different about the more expensive units e.g. Weber Spirit vs Genesis (and variations within each). They're all pretty fucking expensive, I just want something that'll do a good job and last (guess that might rule me out of the combi BBQs).

Binky Yeah, about that. Well worth getting an instant read thermometer to save on guesswork. Not a huge benefit to doing them on the grill mind you, as no fat to drop down and start smoking. Saves heating the kitchen unnecessarily I suppose. I'm going to try smoking a small brisket on my gas grill this weekend. I'm sure it'll turn out awful!

Can't help with gas stuff, I know nothing about them aside go with a reputable brand.
Chicken breasts I would actually do indirect, plop 'em in a foil tray and cook like in an oven, a few wood chips for smoke and you'll be fine. Keep an eye on them but 30 mins maybe 45 if needed. If you do have a thermometer check after 15-20 though.

I've got some whiskey chips that are absolutely amazing. The flavour they add to chicken is incredible.
Doing some beef short ribs on the bbq this weekend. The fat drop from them will be smoke heaven.

I've just bought the Grillstream 4 burner hybrid, haven't used (or even built...) it yet but from everything I read and watched they seem to be well regarded. Going to use our old Weber kettle this weekend and get the Grillstream built ready to use next week.

I'm far from an expert but my Weber Spirit E-210 has been solid for the last 8 years. A mate had a Landmann, German brand that seem good but sure if they're much cheaper.

Yeah, same model as Ecosse and can't fault it. 2 burners might be a bit limiting, but it suits me fine.

I have a hankering for steak tonight and recall before I started reverse searing on the grill I used to chuck a bunch of brie on the steak after I turned it so it'd go all melty when resting. Seems to me this would be great with a touch of smokey bbq flavour. In saying that I think tonight I'll take advantage of the fresh parsley and make a garlic, butter, mustard, parsley board rub with a touch of whiskey in there.

I'd go with the parsley board rub, sounds great. Yeah purely as we have fresh parsley and fresh bread to soak up the juices. Totally going to do the cheese one next.

It's not really a smoke, lamb doesn't need it at all. Just fill up the side baskets on the weber with coals and let her rip. Much as you would with a roast chicken. Depending on the size of the leg should need no more than 2 hours, I never bother with the temps on the weber kettle so couldn't say.

Yeah I probably overthink this stuff to be honest. So would you basically fill one of the weber coal baskets with hot coals and leave her to it? Or both baskets? Come to think of it I haven't roasted anything on the Weber yet and plainly haven't got a feel for it.

I fill both sides up full as you can and once they have stopped with the charcoal smoke I throw on a handful of soaked wood chips on either side and put the lamb in then. Only issue is if one side goes out then I generally have to finish in the oven. Same method really for any roast piece be it beef or chicken and I only monitor the internal temps of the meat so you know when to let it rest.
Kind of hard to go back to using an oven for roasts once you get the hang of it.

Weber gas BBQ are amazing. First BBQ I have ever had that has not rusted away within 2 years (kept outside all year) I use my Genesis almost daily in the summer instead of the indoor oven.

My Kettle I have had for around 10+ years and it has been kept outside uncovered that whole time, rain, freezes(in Belgium) and direct hot sun and it is still in one piece. Certainly seen better days to be fair but definitely not rusted through. Nearly 2 years ago I got a stand up grill type bbq with a closing hood and that is showing signs of rust on the hood already, it was a pretty entry level one I just wanted more grill space.
The Smokey Mountain has a cover though.
