Lots to choose from. I’m currently playing through the old hunters and it’s up there for me. Three great new areas and 4-5 excellent bosses but most importantly it has loads more trick weapons and all of them are lots of fun and mix up your gameplay options for the main game. Perhaps a little bit too hardcore, especially the first area with so many hunters everywhere and many other annoying enemies.
A few ideas for you.

I bet you lot can suggest loads more I’ve forgotten so let’s discuss. I think all the ones I’ve remembered above are brilliant in their own ways and improve on the main game.

Trying to think of older stuff but my mind is mush.
Half Life episode 2 is probably my favourite but I also hate it because it left everything unfinished which I still can’t get my head around.

Any Soulsborne DLC (Niohs included... Wo Long's DLC boss difficulty spikes left a bit of a bad taste tbh) Any Xenoblade DLC If I'd gotten off my butt and played the Iki Island expansion I'm sure it'd be here too

In terms of "I can't imagine playing the game without this expansion", it's probably War of the Chosen for me.
But the massive free expansion to Into the Breach also counts. Or Prey: Mooncrash.

Not much to add that hasn't already been said (although, I'm sure people will say others that I love too). I would say Bill's Mysteries of the Sith suggestion is an excellent shout. That was a great addition to the original Jedi Knight. Only thing it lacked were some more terrible/awesome FMV sequences.
Also agree with Left Behind and Old Hunters. Probably all From Soft DLC really (even when I'm cursing them), but Old Hunters is possibly my favourite thing From have done.
From the world of RTS, I would add in StarCraft Broodwar as being basically an essential addition. Also Rise of Nation: Thrones of Patriots adds some really great quality of life features that I couldn't imagine playing without (don't actually think I ever have).
The Civ IV expansions were excellent too.

RDR1 Undead Nightmare is a great shout, and immediately came to mind.
Whilst not official DLC, the mods for the Silent Hunter series are almost essential, especially for 5 which is just a buggy mess without them. But for 3 and 4 they take what are great games and make them essential (if you like sub sims).

Worst - The Morrowind one that added high level ninja assassins trying to kill my poor level one character, and then when I finally managed to savescum my way to beating them, basically broke half the game by giving me their weapons and armour that were better than anything I found for the next 6 months. Tribunal??

Oh, there's another one! Say what you will about the open world AC games, but I liked how their DLC embraced the fantastical along with the historical, especially Odyssey's. So there's those. And the Hyrule/Fire Emblem Warriors games feel much more complete with their DLC tbh. (and my snarky side wants to say Tears of the Kingdom, as DLC to Breath of the Wild )

I was thanking about the Red Alert expansion - the one with the hidden giant ant levels. Didn’t mention it as wasn’t sure it would be classed as DLC because it came out in the olden days.

Warcraft 3: The Frozen Throne Baldur's Gate 2: Throne of Bhaal Dark Souls: Artorias of the Abyss Binding of Isaac: Wrath of the Lamb
I'd probably go with Frozen Throne, Artorias or Old Hunters for my personal favourites.

That takes care of the top of my list. My own opinion being that FROM do fucking amazing DLCs.
The Rest: Bioshock 2 - Minerva's Den Dishonored - The Knife of Dunwall & The Brigmore Witches Prey - Mooncrash Diablo 2 - Lord of Destruction
There will be more but that's all I can think of just now.

Mass Effect 2 and 3 both had great DLC but it did feel like it was straying into “pay extra to get the full game” territory at times (Leviathan in particular) rather than “extend you experience”.
Oblivion’s Shivering Isles and Knights of the Nine quests were both really good fun. Seems crazy to think of the hostile reaction Horse Armour got at the time when now its almost generous how much they gave us and today you’d be paying for each piece individually.

I think it's a bit different in the sense that most cosmetic DLC is for multiplayer, as opposed to the likes of horse armour where you'd be the only one looking at it.

Seasons is good though.

I suspect the expannsion would have been fine if I'd installed it later on, after leveling up a character. Unfortunately I just got the GOTY edition which installed all 3 together, which meant Tribunal kicked in right at the start of vanilla Morrowind.
