Struggling with Iron Chef, the food bit is great but the chairman is annoying as fuck. I actually had to rewind to get one of the results as I had tuned out to avoid listening to him.

Now I food coma and watch Iron Chef It’s no burger but that sounds great, I’ve yet to try sous vide at home. How did you judge when it was cooked enough in sous vide but little enough so that you could get a good sear, Mail lard reaction and finish medium rare?

I prefer pancetta to guanciale tbh , I know it’s traditional but it’s just sooooo fatty.
