Since I started employing J. Kenji Lopez-Alt's stir fry methods, it takes me a lot longer because everything is cooked separately to compensate for the relatively low output of my hob - but the results are fantastic. Top tip - you can get a vague approximation of wok hei of you blast it with a blowtorch at the end of cooking. Any pointers or idiots guides to this? I'm cursed with a ceramic halogen hob, would love to know more. Basically just cook everything separately and bring it all together at the end. Cook your protein first and pop it on a bowl; then your veg, and add that to the bowl; then your carbs, add in the contents of the bowl, add your sauce, blast it with the blowtorch, job's a good'un. Would recommend Kenji's book The Wok if you're into southeast Asian cooking.

Local world food shops will have stacks of Thai Basil as well.
They're a good send for spices and anything outside of the what Supermarkets class as the norm.

The big Chinese supermarket in town doesn't seem to stock it, annoyingly.

Supermarkets do Thai basil goat, both our local Tesco and Sainsbury's do it as well as Waitrose. Maybe they only do Thai Sweet Basil but not the holy basil that goat is after

With the volume of chillies I add, regular basil probably suffices. If I go the big Sainsbos I'll blow all my pocket money on booze. And hookers.

Tomorrow night I'm going to barbecue for the first time this year, bought some promising Argentinian Ribeye and a nice Châteauneuf-du-Pape. Can't wait.

It wouldn't if I knew where it was located.

Why have paté when you could have foie gras?

Why have paté when you could have foie gras? Cost, general availability at Tesco and ethics, I would suggest. Not that I can talk about the ethics. I've eaten it twice*. It was almost spiritually delicious, and I would probably eat it again if it wasn't a product of barbarity. *in my meagre defence I had no idea what was involved in its production on either occasion.
