For cheese on a breaded/battered thing like a chicken sandwich you don’t want to melt it - or at least you want to use a cheese that won’t liquify the breading to mush when it melts. Swiss or provolone, maybe fresh mozzarella. Cheddar should be a no, the fat separates too quickly.

Ordered from a new place. Brisket was ehhhhh, a bit over, but did have a good smoke taste. Ribs were good. Turkey decent. But I’m glad they gave us sauce on the side as it sucked. Tasted like budget store bought crap, just sugar and artificial tangy-ness. On goes my stock of Carolina Gold and Kansas instead.  |
