Can't say I've ever noticed a proper chippy that's run by Chinese-English. Seems to be a bit of a wild assumption. It's just the norm, nothing to do with who's running the place. I’ve seen a fair few to be fair. Oh, and whilst arguing - I’ve not been impressed by Fish and Chips in Oz. When I visited it was with a mate from Melbourne going back after years away who was all excited for it and we got what he called shark and some weird shit that I think was called something similar to dim sum but wasn’t - some deap fried abomination.

I grew up with half and half with curry sauce from the Chinese too as the standard post pub snack. I miss those days of being a skinny fuck and yet having that most night after a load of pints. Since moving back up north last year I’ve started the fish and chips and curry sauce and it’s great. I got suckered in as the English chippies now do loads of different ones - Irish, English, Chinese and another that I forget. Irish curry sauce?...is it potato soup?

Dry rub on, they're getting a braise in cider+the rub then making my own bbq sauce with the liquor, ketchup, maple syrup and soy sauce which goes on to caramelise them in the oven.

Sounds awesome. Takeaway for me tonight but I’m making a lamb stock today and using it to slow cook lamb leg in the slow cooker for tomorrow’s dinner. I’m quite excited so hopefully o don’t make a cnt of it.

ALSO share your steak cooking techniques and it’ll probably sway me. I almost always sous vide and then finish on a raging hot salted pan. Perfect mid-rare every time.

Kenji's reverse sear method ftw. Gets rid of more surface moisture than a sous vide would, so a slightly better crust.
Goddamnit. Now I want a steak. I'm working today so Tesco finest pizza in the oven and a well needed beer!

I'm fussy with steak these days. Needs to be a piece at least 1kg and 2 inch thick, has to be reverse seared on the bbq. Anything else and bin it.
I am being overly dramatic but salt and pepper on 15 to 30 mins before cooking and that is my preferred way to cook one. You can do it indoors in a pan and oven too if you must.

It's excessively crunchy, sprays itself into your mouth as you bite, the strings are horrid and the overall flavour is redolent of piss. As a stock veg, or celery salt it's fine. For actual consumption naw. No. Never. Not ever.

If you snap the ends of celery you can get rid of most of the stringy bits. I bloody love the stuff. Amazing raw with a little bit of salt.
