It's stupidly hard to find San marzano's in the UK for some reason. Best bet is usually Waitrose. Ocado stock them but they're ludicrously expensive The Cirio tinned tomatoes they have in Waitrose aren't bad.

It's the youngest's names day today so for lunch he wants a chicken tikka masala so here I am at 1030am on a Monday lighting the bbq to get that sorted by lunch. He wants raclette for dinner. Good job we are still on holidays.

My resourceful partner made cheeseburger mac n cheese using IKEA meatballs, gherkins and tomatoes. Topped with that fake cheese you put in burgers.

LegendaryApeInstant Pot Carnitas v.2 1.5kg boneless pork shoulder, cut into 4 or 5 big chunks Rub: 3tsp salt, 1tsp garlic powder, 1tbsp cumin, 2tsp oregano, 2tsp dark brown sugar, 1tsp basil, 1tsp ground coriander, 1tsp chilli powder, 1tsp smoked paprika Liquor: 1/4 cup lime juice, 1/2 cup fresh orange juice, 1 cup beer 1. Put i/p on sauté mode, get hot, add some oil. 2. Cover pork chunks in rub mix, brown in two batches, remove pork and turn off sauté. 3. Deglaze bowl with small amount liquor, add remaining liquor, add pork, put on lid in "sealing" mode. 4. Pressure cook on "high" for 40 minutes, plus 15 minutes natural release. 5. Take out and shred pork, reduce the liquor on sauté mode for 20-30 minutes stirring frequently. 6. Spread the pork out on tray that can go under the grill. Drizzle some reduced liquor over pork, grill until starting to go brown and crispy. Turn everything over, add more liquor, grill again until crispy. Repeat until all liquor used up. 7. Serve with buns, tacos, tortillas, salad, cheeses, whatever floats your boat.

Tonight I was supposed to just do some fried rice. Ended up doing fried rice, stir fried vegetables in Oyster sauce, spring rolls, spicy edamame beans and prawn crackers. Family loved it. Pizza tomorrow as I CBA.

gf is working tomorrow night so I'll be feeding myself something naughty. Consider a KFC,a Zinger Burger (or the Rösti Zinger they have just now) and 6 hot wings, that should do the trick.
I know it's evil but KFC is a very occasional guilty pleasure.

Goat's dinner is about as healthy as mine, I got my KFC Rösti Zinger Burger and 6 hot wings. For dessert I got a couple of donuts from Dunkin donuts. Diet better start on Monday.
