I just finished my first set, the HG RX-178 GUNDAM Mk-II (A.E.U.G), and it was very satisfying. Immediately ordered an RG Wing Gundam. Haven't gotten into panel lining year, but will print a stand for maximum posability. It's sick a pleasant hobby, no tools needed, but a decent nipper and a hobby knife is recommended. Hours of peaceful contemplation. Of you don't know what I'm talking about, and would like to find a new way of spending money, i recommend this video youtu.be/sJXbUhBilcc

Yes! I went a bit mad for it at the start of the first lockdown. Started a thread in the before place on it.
I walked in to a geek shop on the way home from the last day of work. Walked out with a 30 minute mission kit and pair of nippers.
Now I have a stash of about 12 kits waiting to be done.
I partially painted them which has kind of ruined them while I learn all about whatβs going on but itβs part of the process. Airbrush, varnish, panel lining etc
I think with the lockdown it was hard to get parts and paints but you should be better placed now.
My best kit, still in box, had to be the MG Barbatos Rex from IBO - itβs sublime.

Have you tried the panel line pens that are available? I'm not sure if you're supposed to draw along the entire like with them, or if it's the same capillary force mechanism as with the really thin paints.

I've been tempted as some of the people on another forum are well into it and one of the streamers i watch has a bunch of videos of them making different Gunpla. That video you posted is impressive but damn it annoys me, ha. I'll still check out some of their other videos though.
The main problem is where to get them from reliably and the cost of some of them and the fact i have no real place to store or show them. Otherwise i'd have tons of them.

I managed to source Tamiya Panel line which is excellent. I think there are 2 types of pens. One that you draw along the line and one that uses capillary action like the Tamiya.

There are a couple good UK based sellers I will get a list together later. Cost wise, the 30 minute mission guys are great to get an idea of you like it but generally Β£20-30 will get you excellent kits.

I googled and found a couple in Sweden. I've was run by the same company that runs a boardgame store I've used so I wasn't worried.
But if there are places in Sweden that sell, then the UK should have as well. Process weren't too bad depending on what grade you get.
Should try and get some of that Tamiya panel lining stuff.

Can I recommend hobbyfrontline.com as I've gotten a few kits from them over the last year or two? Irish based, fairly decent selection of kits but nowhere near the range of your hobbylinkjapan type place. Prices are decent and delivery is fairly quick.

Also, although I'm not active on it, I would recommend the Gunpla Club podcast discord channel. It's a very welcoming community and people seem to be quite helpful with tips and advice for making the most of your kits. They tend to do monthly theme builds too and some of the results are terrific.
