I just watched a 3 year old Linus video where he suggested using cloudflare and 1.1.1.1
I'll give it a go, but it's hard to stay on top of these developments. We can pop in new and exciting DNS options into this thread.
Open DNS and Google where always the go to option previously.

Only one I've ever used is OpenDNS which I got on well with. Just never got round to setting it up since I moved house.

Cloudflare is 1.1.1.1
I just use that as my primary and Google (8.8.8.8) as secondary.

Gnnh. nextdns.io/ was semi-useful until I configured my Pihole.

It really depends what you want. For the vast majority of users, your ISPs DNS will likely be sufficient. If it isn't, CloudFlare, Google and OpenDNS probably will be. If you absolutely must have the fastest servers you can either run one locally with a upstream connection or you can use a DNS benchmarking tool to find out which nearest you will perform the best: www.grc.com/dns/benchmark.htm

Gnnh. nextdns.io/ was semi-useful until I configured my Pihole. Same, except I used to use 1.1.1.1 Now the pihole takes care of all of that
