Yeah, I actually don't think "post rock" even has a solid definition at all. It seems to be modern progressive rock? I'm not entirely sure. It's why I listed a few bands as examples of what I meant. What seems to be pretty prevalent, though, is that vocals are rare, if at all present. Indeed. I picked the two Irish bands I mentioned because they both fit the instrumental bit. And not just because Adebisi Shank are named after one of my favourite TV characters ever. Sadly, they're now defunct, but both they and And So I Watch You From Afar are responsible for some of the best, mesmerising gigs I've seen in recent years (although, not that recent any more). ASIWYFA's first 2 albums & The Letters EP were on loop for me for about 3 years. I can't get on with their output after Tony left, it has weird sort of football chanty vibe to it, of that makes sense? Slight aside, I got into them when they supported Them Crooked Vultures. I couldn't go because I had an exam at 9 the next day and I used to get fuckedup at gigs back then. My GF went, had an outstanding time and told me I would love ASIWYFA. Correct. We aren't together anymore.

I'm not super keen on All Hail Bright Futures, but I liked Heirs and the Endless Shimmering. I know what you mean about the sound changing, though. They were still really good live, though. I saw them on the Thekla in 2017 and again in Brighton in 2018 and they were both really good shows.

Explosions I'm a bit more meh on but they have their moments. Same, but First Breath After a Coma is one of those tracks that will immediately lower my heart rate. Loads of great bands mentioned here. For my money, no one does a post-rock crescendo quite like MONO...

As an aside, I bought the Earth is Not a Cold Dead Place without hearing the band previously on the recommendations of someone on Eurogamer forum. I don't remember who, but that must be a LONG time ago, now.

Lots of great mentions already so I can only add Tortoise and This Will Destroy You youtu.be/wgDUhALYWYQI've liked things from This Will Destroy You. But to me they sound so similar to Mogwai that I don't know how much of that is just me liking Mogwai. It doesn't really feel like they've got their own unique sound.

Any love for The For Carnation? I like their self-titled. Most of the other Post-Rock in my collection is the usual suspects but Hammock and We Lost The Sea also come to mind (definitely found out about Hammock through the 'other place' forum). There's a whole bunch of Silent Ballet compilations on archive.org if anyone's interested in a whole lot of free stuff: archive.org/details/LostChildren007

As per usual I overlooked the thread. Anyway, Ostinato may still kind of fit the bill.
By the way, cheers for mentioning Red Sparowes.
Also Jodis, side project by Aaron Turner (Isis etc. etc.). Again, no clue if this is actually real, proper Post Rock.
