I've just got one of those pull through things from Amazon that costs a tenner, keeps the knives fairly sharp, no complaints here. I've got one of those but it feels wrong to drag a beautiful piece of Japanese steel through that.

I could do with a good knife sharpener and some actual knowledge in how to sharpen my knives. Our wedding knives are blunt as all hell (we have had them 15 years and never sharpened them...). Really want to actually sharpen them now.

Watch some videos, buy wet and dry / whetstone / diamond plate and have at it with your cheapest, shittiest knife.
Realise it’s harder than it looks. Practice some more. Finally be able to cut things without bearing down like a ton of stone.

Honestly, as long as you don't have incredibly expensive knives a pull through sharpener works just fine.
Using a whetstone and the like is definitely more fun though!

It seems like every tourist who comes here leaves with a set of expensive Japanese knives. And I'm still using the cheap one with the plastic handle that I bought from the supermarket 10 years ago. It doesn't even have a kanji stamped on the blade!
Seriously, if an airplane leaving Japan ever explodes, it's going to be raining fucking kitchen knives

Actually, I think the one on the right says "Made by Fukazawa" or "Fukazawa Works" No idea if that's a famous brand though, or like homebase. One on the left, I can't make out.

These are niche little hand stitched shoemaker rasps, nothing you’d find at a general hardware shop. Have to go to Asakusa to get these his touch mark is a sweet little dog’s head look

I love Liogier, got loads of their rasps. Their version of these japanese style are good, spenny though so generally get whoever’s going to Tokyo to pick up a few. Auriou used to be great before they closed down, not sure what they’re like now

(No pun etc. ) He got out of independent saw making a few months later to work for Blue Spruce. Provided the best customer service I’ve ever seen.
