You can get those Transient Curse items from the pot at the start of the area. If you need more, the ghosts drop them

It's a good idea to run around New Londo with the Covetous Gold Serpent Ring (if you don't have it, you can find it fairly close to the beginning of Sen's Fortress, so you might as well go there first and grab it - and then just get out if you so wish, there are no bonfires between the ring and the Undead Parish so you can just Homeward Bone your way out). With the ring equipped, the ghosts are likely to drop more Transient Curses than you'll ever need.

Wow thank you everyone. I might try the fortress first it sounds like both of my options at this point are tricky. I'm trying not to give up as I have done so many times before. At this point I've played Dark Souls for hundreds of hours over the years and this is far as I've gotten. Weirdly despite that I still kind of love it. I've been this way since Demon Souls. Barely got anywhere in that but it just got it's hooks into me

I will say that I think the incessant poisoning in blightown and now the cursing is not cool and pretty shitty design that seems to want to frustrate rather than challenge you

The poison area in Dark Souls 3 is much worse. I don't think they add anything or enjoy them

I managed to beat Ornstein. Used all my flask charges and about 7 humanity in addition. Almost never managed to dodge his charged spear skewer bullshit. But it seems the best bet is to just always hug his legs and quickly roll away when he does the Smough move. At least this way he mostly couldn't hit me with his other bullshit moves and I was able to get a hit in here and there.
Not sure how you guys manage without a shield, though, would have been impossible without an Eagle Shield +5.

Bosses have tons of downtime after an attack, and their attacks are usually very predictable. Basically, as long as you can i-roll through a swipe or whatever, you are going to do lots of damage. Much more than if you used a shield, since your stamina will be left almost intact. Gwyn is the only real issue. I always summon for him. The DLC bosses on the other hand seem specifically designed to prevent that strategy. They all attack relentlessly (pretty much on par with Gwyn) and jump away as soon as they are done, giving you very little time to counteract. Base DS2 was similar to the first game again, while the DLC and then all of the subsequent games were also designed in the other way, which might be another reason why I never really got into them.

I just stopped using shield in DS games at some point and can't see the point in using one now - the idea of standing there taking hits just seems weird now. Some attacks you just need to get used to spotting so you can back off as quickly as possible to avoid (Manus' big combo attack, Ornstein's lighting - I think he's vulnerable for ages after that one)
Gwyn is the only boss I parry - it's pretty easy and turns him into a joke
I think most DS2 bosses are really easy either way, one of the downsides to the game. The DLC bosses are better but everything is doable without a shield. I'm probably better than average at From games but not doing level 1 runs or anything like that

If I can't beat a boss in 10 tries, I might try for another couple, but then I just give up. There are way too many games on my backlist to keep banging my head against a particular part in any single game without progress.

I just started a DS1 playthrough. Just got past the first boss - easy peasy without a shield
I did die twice (both times to the Black Knight) but I was also playing without sound

Nito is a piece of piss. Don't think I ever had trouble with him
Manus just has that one attack. I think it might be better to step back than try and roll out of the way of it - can't quite remember - but I don't remember anything else about him being too bad. Maybe a magic attack?

Not sure how you're supposed to kill Nito or Manus without a shield. Nito's attacks take ages to hit, and then he stands still for five centuries. If there's one boss who will not kill you, it's Nito. Only his flunkies might be an issue, but even that is unlikely. Manus on the other hand, that guy is a pain indeed. But then I'm sure he's a pain with a shield too. Better summon, or kite him from outside.

I find skeletons very predictable, but that's just me. Even without a shield, dealing with two or even three of them is not really a big deal imho.
Now, if Nito had been smart, he'd have surrounded himself with a couple of those four-legged skeletons, which would have made him the hardest boss in the game.
