Yeah, one thing to get in the habit of if you're not massively comfortable with the timing is after a deflect is to hold block afterwards until you want to do the next deflect, at which point you release and press the button again. No need to tap. Don't forget you get stamina back faster if you hold block - if you have some distance on an enemy just block/strafe around for a bit to get yourself back to good posture.
One warning: there is a sort of cooldown on deflect attempts. Repeatedly pushing the button narrows the timing window.

OK, so I haven't been making it harder for myself. This is great news. I've now got two paths open to me: Senpou Temple, where I've already rinsed a bunch of monks, and Sunken Something where I've already rinsed a bunch of primates. Is there a sensible order to these two, or just run both to their respective boss encounters and suck it and see? You can't do the bosses of either until after you've killed Genichiro. The only "main" boss you can do before him is the monk at the end of Mibu Village.

bichii posted a video a while back of her fighting the ape, she just waited for the parries and timed them dead on. That's how I'd tend to do it, it feels good. Bear in mind I've finished that game a couple of times, which is where I'm coming from. Not meaning to sound like a snob
That's a prime example of a boss that's basically designed to be deflected from the get go. Nice slow clearly telegraphed attacks. After I watched bichii do it, that inspired me to adopt the same approach and that phase went from a confusing nightmare, to one of the easiest boss phases in the entire game.

Again though, don't JUST concentrate on the deflects. Sometimes it's good to block, sometimes it's good to quickstep and go in with a strike that'll do additional vitality and posture damage. Each encounter is designed a bit differently.
Also why the fuck have I never used mist raven before, it's awesome.

If it makes anyone else feel better, my 11yo son completed this in about two weeks including the demon of hatred. I know. It made me feel like shit as well. Haha! I think we're all just beaten down by life at this stage and our previously free-flowing minds have turned to shit đź’©. Great job though mini-wunty đź‘Ť. I congratulated Phattso in the Pigwhip thread, but I'll do it here too. Congrats on beating Genny! Onwards now, Ninja-phatts!

But seriously, thanks for the encouragement and advice and for ignoring the entitled whinging I've already done and intend to do in the coming weeks. I think I only made it to the end of Hollow Knight thanks to the thread on EG. Hopefully you guys can drag me through Sekiro to some semblance of an ending there as well. So: Mibu Village, Sunken Depths, or Senpou Temple next according to the wisdom of the hivemind? Or are they all equally likely to fuck me up?

Mibu villiage is really easy I think - the enemies are more annoying than anything else
Temple is probably the hardest. There's one enemy type that's quite tough

None of them are particularly problematic tbh, so take your pick. The depths lead you to Mibu Village, so I'm presuming you mean the Sunken Valley. I say not problematic, they each have their spikes (there's a snake eyes mini boss at both Sunken Valley and Ashina Depths that can be a bit of a ballache for first timers, and Senpou temple has the spear adepts that are tricksy) but they are very much do-able. Maybe go Senpou first as it's a lovely area.

Personally I would do Senpou temple. It's not that hard, there's one hard enemy type that only shows up like twice. The boss is piss easy and there's lots of relatively easy enemies you can get lots of resources from. It's basically a free weapon damage upgrade.
Personally I recommend doing Senpou -> Sunken Valley -> Depths/Mibu. Don't do Sunkey Valley last though whatever you do, iirc the boss gets powered up if you leave it for last.

Maybe I'm misremembering but I'm sure I read that if you do the other two areas first he gets a buff to compensate for your increased attack power. Might be wrong though.

Senpou done. The first mini-boss was fun, the second (centipede dude) looked optional but I managed to finish it as well. The "boss" in this area was a really great change of pace. Sheer luck I had the volume up though otherwise the fourth Monkey would've eluded me!

Well, I say "done" but I'm pretty sure there are a few paths I didn't fully explore. Plus there was a kite at the bottom that must need something doing to it, so I think I'll explore a bit more, grind out some cash and skills, and see what's happenin'.

Snake Eyes and Caterpillar sent to meet their makers. Slightly odd in that they’re both mini bosses that I couldn’t get a sneaky stealth deathblow in. Had to do it the hard way. Luckily I’d just spent seven years practicing deflects with my mate Genichiro, so neither of them remained upright for long.

Yeah, last time I fought him it was phase 1 that fucked me up. Then again, liberal use of oil, fire and firecrackers fucks him up pretty good.
One thing I never managed to do was the spear grab trick after that. Stuned him easliy enough, did the old R2->R2 and nothing happened. Could I have been too close?
That's me battering into NG+ now, all Jonny Big Bollocks. I'm just mowing through shit left right and centre, it's great.

That Guardian Ape is a bit of a handful then, eh?! Must've had a dozen runs now just trying to learn the patterns and look for any weaknesses I can exploit. Every time I've tried to get up close and personal I'm getting creamed, so working on the assumption I need a new tactic. So I'm presently trying to complete The Flung Poop Protocol, whereby I hand back and bait out the shit flinging, then race in - block the poop (eeewww!) - and get a few cheeky hits in. I haven't finished the phase yet, but that's feeling like my current best avenue for success. Amazingly, I was able to run around for several minutes just watching the dude without either of us landing a (s)hit! Intriguing fight, I'm enjoying it despite making slow progress. On the topic of slow progress, I realised I hadn't been back to the opening area of the game where I was down a well. There's a whole new area there (and I'm assuming I'll find Mibu Village that was mentioned above). Got through one mini-boss at the entrance (great scrap in tight confines there) and found some mystical prick with floating skulls that I've noped out of, sprinted on and found yet another Snake Eyes encounter. So! Lots of avenues to progress, lots to explore. And I have 10 skill points to spend! Should probably figure out where to put them.

Phattso Yeah that's your route to Mibu village (well, one of them). You can go back and fight the Shichimen Warrior. Like the headless, it's worth killing them, but don't stress it as later in the game is fine to go back to them, as you'll have a few upgrades that make it much easier.

Phase 1 is a weird phase. He's a giant fucked up ape so it's just naturally hard to read his movements and parry. I had better luck making use of the grapple points and dodging about and using hit and run. It's the second phase where you can get up close and personal conistently. Well... most of the time
