So I have a CAT6A cable and need to terminate each end to wall sockets. Stupid question possibly, but is that a cross-over configuration?

Don't need to worry about cross over anymore. Devices nowadays don't need it

I've always called them green-white etc, it looks wrong the other way around.
There comes a point where you realise that knowing how to crimp cables is an utterly useless skill and you're much better off just buying proper molded cables of an appropriate length and colour.
Sockets for punching down are usually colour coded, so just do each one the same and you'll be fine.

Best avoided for sure, but sometimes it's er, unavoidable! The trick is to get the RJ45 connectors that accommodate a cat6 cable.
You can get those special type of RJ45 connector that let you pass the 8 cores through all the way through the connection for quicker fitting, but they need a special crimper and a wee bit dearer.
