Just recasting seems like one option that would make sense. I don't think it would be that big of a deal for the majority of people. Those in the know will understand the decision and the average punter will have a moment of confusion that they will forget about if everything else going on is good.
The better option would be to just put the whole arc on hold and move on like it didn't really exist, besides the odd place where the Multiverse might be relevant. Even as a defender of current MCU, even I recognise that the Multiverse arc isn't really working and actively damages stakes of most of the stories they are telling. The issues with Majors are a good excuse to just move away from it.

But then you can just use the end of Loki season 2 to say all the timelines we saw in Quantumania have been erased and in the new timelines that Loki tied into his world tree Kang looks like Kirk Lazarus or Lincoln Osiris or whoever . Its the perfect in-universe get out of jail free card.

I still don't think it's specifically the multiverse that's the issue. The two most successful films post-Endgame were both about the multiverse (and you could argue Loki is the best-received TV show, too).
I reckon it's more that it's all loosey-goosey and doesn't feel like it's going anywhere. Every other "Phase" built to a big Avengers climax, these sort of peter out and wash over one another.
It's bad enough that we get all these celeb cameos in the post-credit stings, but even something like Shang-Chi has just stopped with no further reference at all. If he pops up again, in Shang-Chi 2 or an Avengers movie, they'll need to do a Marvels-style recap reminding people who he is.
Hopefully one day we'll get a fascinating oral history of "The Multiverse Saga".

Even though we’ve now had Wandavision, What If, MoM, Loki, No Way Home, Shang-Chi, Ms Marvel and Marvels all explicitly being about multiverse stuff and others being adjacent to it it still feels weirdly like they haven’t pulled the trigger on fully committing to it.
Its far more content directly tied to Kang and the multiverse than the pre-Endgame stuff tied to Thanos and the Stones. But I think you can only pull that trick once. They did all the world building pre-Endgame to have the space to tell Endgame.
Now everything is established it feels like the most natural storytelling rhythm would be to move quicker since everything else is in place. Instead it feels like it was quite plate spinning for awhile.

I'd be fascinated to know why, because all the way through the first three phases one film teased the next the vast majority of the time. Since then it's all been up in the air and felt unconnected. Which would have been fine too, I guess, if they were focused on introducing new characters and not necessarily bringing them together.
I do wonder if things like Covid knocked their whole schedule out of whack, forcing them to delay or rearrange things much more seriously than we've been told. Because even if you weren't building to a new Avengers team, why not at least lead up to a huge movie like No Way Home as your phase-capper? Why not have, say, the Ten Rings from Shang-Chi lead into a post-credit sting that sets up whatserface, the baddie from The Marvels, looking for a similar cosmic bracelet? It feels like the only successful setting up & knocking down they've done is having Yelena get sent after Hawkeye in Black Widow, which then obviously was dealt with in the Hawkeye show.

Covid definitely fucked over a lot of their plans. But it also fucked over a lot of other things, good things were still made during the pandemic and I feel they, as an entity, rested on their laurels somewhat believing that the Infinity saga would carry them over to the next stage.

The multiverse does make the whole thing feel very low stakes and is mostly pointless except in Spider-Man and Loki.
There feels like there have been several films seeing something up, some in the post credits in the films. None of those have paid off so far. When is Harry Styles appearing again or Charlise Theron?
On top of that they killed off half of the mainstays and have made no attempt to have others that feel important to their universe. Where is Hulk, Captain America (except on his boat). What happened to Shang Chi and all the others? Why waste all those alternate characters/actors in Dr Strange?

Apparently the new Wish movie tries to connect all of the old classic films together into a shared universe which I don’t think a single person on earth wanted.

Disney+ has really fucked them over when it comes to theatrical releases, they go from a company that actually limited the physical releases of their films and sometimes left them unavailable anywhere to pretty much saying "if some of you don't want to bother going to the cinema well the film will be on your TV in a couple of months."

I keep forgetting Shang Chi is a thing. I missed it when it came out, despite hearing it was good and wanting to see it, but I don't think he's shown up in any of the other movies or post credit scenes. Unless I've missed it.
As simple says, the multiverse stuff just seems to be repeating the same things. We get it, there are alternate versions of heroes, and there are x-men somewhere. You've shown us that in No Way Home, MoM, Spiderverse, What If, Marvels, and probably in several of the ones I haven't watched. But what's the point? Other than 'hey look! It's an x-men cameo!'
It sounds like only Quantumania and Loki actually started going somewhere with it, and I'm not sure how many people have even seen those.
The post credits scenes should be setting up the next movie, or hinting at a big bad, not just being fanservice for characters don't seem like they're going to show up again for ages.

I'm going to offer a counterpoint here and say I have no issue with the hand being "ignored". It was in a remote location so had no direct impact on most people's lives and it's inert.
I imagine there'd be some research scientists visiting to analyse it, but if there's no conclusive findings or anything of interest, I'm not really sure we need it to be referenced.
At best, maybe there could have been a news report in the background or something, but beyond that it's just not that interesting in itself.
