Feeling extremely lazy so just a quick peanut butter noodles dish (with spaghetti because I'm a monster). Spicy AF and still feels good in my belly, and it all comes together in 10 mins.
One of my favourite recent discoveries and it's prompted me to start trying more gloriously goopy unctuous sauces...

Had a massive BBQ. Homemade burgers, steak, very overcooked pork chops, spuds, halloumi, portobello mushrooms with wholegrain mustard, crusty bread, cheese etc.

It's the smallest Toastette's birthday tomorrow, and her birthday feast is today. She loves roast beef, so I'm having my first crack at cooking a dry aged beef rib roast. Wish me luck!

As discussed elsewhere, it's goulash tonight.
If you're Hungarian, please don't hurt me - as with almost all of my cooking, it's completely non-authentic!
White rice in the Instant Pot (with butter and the right amount of water).
Fry an onion, some floured beef chunks and some peppers in the wok (light olive oil FTW).
Season with salt & pepper.
Add beef stock, garlic powder (I know, I know...), hot smoked paprika and cayenne pepper.
Add tomato purée and tinned tomatoes.
Bung the whole lot in a casserole, sprinkle parsley on top, pop the lid on and stick it in the oven on Low for a couple of hours.
Switch the rice on half an hour before you need it to give it the right cooking time including ten minutes natural depressurisation, which helps with sticking.

Salt and pepper chicken, special fried rice, stir fried vegetables in Oyster sauce, Chinese style chips, curry sauce, spring rolls, prawn crackers. It was really all tasty, but took about 5 hours to prep and cook but my family enjoyed it, which was the main thing.
Obviously I'm hungry again now. 🙂

Chinese style chips was shorthand for "chips like they make in a Chinese restaurant", which is what my wife asked for (I said I'd cook them whatever they wanted from the menu). Took a while to figure out what makes them like they are, especially with the internet being the contradictory place it is. Basically it seems to be groundnut oil (which is a bit pricey) and twice cooking.
My wife was chuffed anyway.

Yeah, best way to cook chips is parboil them, dry them, fry them, then fry again even hotter.

Like refried beans etc The way I do it is to deep fry at a low temperature (140) for 8-10 minutes. Rest them and increase the temperature to 190 ish and when you're ready to serve, crisp them for a couple of minutes. Just means they're soft inside and crisp on the outside.
