Just made one with cheddar, as the mozzarella I was expecting to be in the fridge was AWOL.
Well that was a big old plate of disappointment! Still probably better than any frozen pizza I've had mind you. Flecked some 'nduja on along with some mini sweet peppers... But my god I wish I'd just checked if the fucking mozz was in the fridge before committing to the idea.

Crosta Malloca frozen pizzas I don’t believe can be beaten by any home cooked pizzas attempt, it simply is not possible.

For any of the poolish gang, how are you measuring yeast for it? Just eyeballing it or doing it with little drug dealer scales? I'm trying it for the first time and have a feeling my eyeballing was a bit on the generous side last night, but it looks nice and bubbly this morning (I suppose it would with excess yeast)
Tempted to try baguettes with this method too. It's really no effort at all.

I have a drug dealer scale. But I don't know how important the exact amount really is. I made a 200g/200ml poolish with 5g and 2.5g instant yeast and didn't notice any difference.

Are you letting the dough proof? You have to leave it for a whole day at room temperature. Ignore the bollocks about doing it in the fridge, that's complete nonsense.

I'm doing it like Vito Iacopelli shows in his videos. 1h RT, 16-24h fridge. I forgot to mention above he also adds 5g honey.
I've had great results this way, but dough I'm constantly trying various other techniques, will try a RT poolish with a lot less yeast.

Mine was just following the first Google recipe I found for poolish pizza dough. This guy used a tiny amount of yeast (0.7g for 300/300 IIRC), which is why I asked about the scales. I only did half amounts as I didn't want to end up with 4 pizzas worth of shit dough, but it turned out pretty well. The poolish had about 12 hours on the counter overnight, then mix in the rest of the ingredients in the morning, rest for a bit, knead and then prove throughout the day.

What do y'all think of pan pizza? Always wanted to try it, but you need a cast iron pan for that I believe. And we currently don't have one, as I have imposed a "one in one out" rule on myself. So one of the pans I already have needs to be EOL first. BRB making bechamel in the teflon pan, stirring with a steak knife. EDIT: Wait what, goat is no more?

Anyone with recommendations for shops selling decent pizza ingredients? Tesco pizza mozzarella and pepperoni is acceptable in a pinch, but I want to try and push the boat out a bit.
